Cheesy Leek & Potato Gratin

Ingredients

  • 6-8 large potatoes
  • 3 cloves of garlic
  • 1ozs/25g butter
  • 1 large leek-finely sliced.
  • 10floz/300ml cream
  • 4oz/110g grated cheddar & mozzarella cheese mix (or preferred hard cheese)

Method

A delicious way to serve the potato option at a dinner party as you can have it all prepared and just cooking very gently in the oven, which clears space on the stove top also. Vary the flavouring around as best suits. Sometimes you could use parsnips, celeriac, chorizo etc in her as well as the chosen flavourings.

Peel and thinly slice potatoes and leeks.

Peel and chop garlic.

Layer the potatoes, leeks, and garlic in an ovenproof dish.

Dot a little butter between the different layers and season with black pepper.

Sprinkle a little cheese in the different layers also.

Put the cream into a saucepan and bring to the boil.

Pour the cream over the potatoes until they are almost covered.

You may need more or less cream than in the recipe depending on the size of your dish.

Sprinkle the remainder of cheese on the top.

Bake at 170C/325F/Gas Mark 3 for up to 1 hour.
