Winter Spiced Apple Pancakes

Ingredients

  • 1 overripe banana
  • 3 tbsp milk
  • 1 egg
  • 30g oats
  • 2 tbsp butter or coconut oil
  • 2 tbsp honey or maple syrup
  • 4 small eating apples, cored and cut into bite-sized pieces
  • 2 tsp ground cinnamon or mixed spice
  • 2 tbsp plain yoghurt

Method

  1. Whisk or blend the banana, milk, egg and oats together in a measuring jug or blender jug until smooth.
  2. Melt 1 tablespoon of butter and the honey together over a low-medium heat in a frying pan or saucepan.
  3. Add the apples and spice and mix well together until the apples are coated in the buttery spice mix.
  4. Increase the heat until bubbles form in the butter, cover with a lid or plate and allow to cook for 5 minutes. Check to ensure the apples have softened fully before removing from the heat.
  5. Melt half a tablespoon of butter on a separate non-stick frying pan over a medium heat.
  6. Add 2 tablespoonfuls of the pancake batter for each pancake to the pan. Allow to cook until firm on the bottom and bubbles appear on the top. Flip over and cook until cooked fully through on both sides about 3 minutes each side.
  7. To serve: stack the pancakes up with some yoghurt and top with some apples on top.
