Thien Laitenberger is a young chef from County Mayo, currently working at An Port Mór in Westport and in Tilled Earth as head chef. Whether it’s an everyday vegetable or a wild herb, he believes every plant has a story worth telling. His cooking is shaped by the changing seasons and his family’s new business, Tilled Earth, a garden of over a thousand edible plants.
